Method

  1. Heat oil in a medium saucepan to 180C.
  2. Using a peeler, slice sweet potato into extremely thin ribbons.
  3. Drop the sweet potato ribbons in to the hot oil and fry, in batches until golden brown and crispy, about 3 minutes. Season with parsley and salt and serve.
