EXCLUSIVE: Interview with Guest Chef Jin Choi

Guest chef Jin Choi enters the MasterChef kitchen to challenge the contestants with his culinary expertise. Head Chef at Hardy’s Verandah Restaurant, Jin’s passion for simple and clean cooking will inspire the contestants as they continue to bring the heat to the competition.
What comes to mind when you think of MasterChef Australia?
That it’s a famous TV show and most people’s favourite cooking show.
How do you feel about joining MasterChef Australia as a guest chef for its 10th season?
I think it’s great honour and a great luck in my life - it’s an experience that not many other people have.
What did you enjoy most about your experience? Any surprises?
I have been working in the kitchen for almost 15 years, but when I cooked in the show I felt like I was back to the first time I cooked.
How would you describe the calibre of the contestants, and the dishes they produced?
I could see they tried really hard and wanted to win as much as I did. Their dish idea was brilliant!
If you were a contestant this season, what would be your signature style or dish, and why?
My signature style would be simple; fresh and delicious and easy recipes, with balanced flavours that everybody enjoys.
What are your simple yet effective tips for home cooks?
Use simple, fresh, seasonal ingredients.
What ingredients, techniques or cuisines do you enjoy cooking with regularly?
I love Asian cuisine - not because I am Asian, but because it is unbiased and familiar to people.
What have you eaten recently, in Australia or overseas, that’s blown you away?
Sliced wagyu short rib with grilled enoki at The Bridegroom Restaurant.
What is your favourite thing about cooking, and who or what keeps you inspired?
Anything, anybody and anywhere inspire me.
What exciting new projects do you have on the boil that you can share with us?
My next autumn menu is coming up soon! It’s local food, new techniques and new presentation. I’m really looking forward to this new menu.
