Panfried Sardines with Nut Brown Butter

Method

  1. Season sardines with salt and pepper.
  2. Heat a grill pan over high heat and cook sardines for 2-3 minutes each side or until cooked through. Remove sardines from the pan and allow to rest.
  3. Combine, rocket, capers and olive oil in a small bowl and toss together.
  4. Arrange rocket salad on the plate with the sardines and serve sprinkled with parmesan cheese and with a lemon cheek.
