Miguel has two easy, office-friendly lunch ideas

- Grill the eggplant and haloumi slices in a sandwich press for 5 minutes, or until cooked.
- Add one tablespoon of the tomato pasta sauce to the lamb, and add the other tablespoon to the mashed vegetables. Mix through with a fork and heat in the microwave for a minute or two until warmed through.
- Take one slice of grilled eggplant, top with a slice of haloumi, some shredded lamb, mashed vegetables and roll.
- Place the remaining pasta sauce on the plate and place the three involtini on top. Garnish with fresh basil leaves and season.
