Miguel's Not Fried Chicken

Miguel has cooked up a beautiful crumbed chicken with a spiced BBQ sauce and served with a side of fresh salad.

  1. Combine buttermilk and chicken stock in a medium saucepan. Whisk to combine and bring to the boil over a medium heat. Reduce heat to a simmer and poach the chicken for 5 minutes, or until cooked through. Drain.
  2. Whilst the chicken is poaching mix the BBQ sauce together with the spices to make the sauce.
  3. For the crumb combine the ingredients in a large tray. Season and mix well.
  4. Brush the chicken with the BBQ sauce mixture and then roll in the crumb mixture, squeezing the crumbs into the chicken to help the larger pieces stick. Repeat with remaining pieces of chicken.
  5. Serve immediately.
