Method

  1. Mash the avocado, mixing with lime juice and salt.
  2. Preheat a large frying pan over a high heat. Heat the olive oil and sauté onion, zucchini, and sprouts for 3 minutes until the onions soften.
  3. Add spinach leaves, beans and seasoning and heat for one further minute until heated through.
  4. Take a tortilla, covering the base with avocado. Then add a quarter of the bean mixture to the tortilla to cover half of the tortilla. Top with picked mint and coriander leaves and sprinkle with a quarter of the cheese.
  5. Preheat another pan – there is no need to add any oil. Transfer the tortilla to the pan and heat for one minute. Fold the tortilla in half and cook for 2-3 minutes until the tortilla begins to colour, flip the tortilla over and cook for a further 2 minutes until the cheese has completely melted. Repeat with the remaining 2 tortillas.
  6. Whilst the tortillas are cooking, prepare the salad.
  7. Mix the vinegar and sugar in a large salad bowl until the sugar has dissolved. Add a pinch of salt and a pinch of Mexican seasoning. Add the shredded cabbage and tomatoes and toss with dressing.
  8. Take the tortilla off the heat and cut into quarters. Serve with a dollop of Greek yoghurt and the cabbage salad.
