Method

  1. Mix chickpea flour, salt, garam masala and crushed garlic in a mixing bowl.
  2. Mix chickpea flour, salt, garam masala and crushed garlic in a mixing bowl.
  3. Make well in centre of flour and pour in chilled soda water, whisking constantly to make thick and smooth batter. Add a handful of ice to cool – the temperature difference between the hot oil and cold batter will help form a great crispy exterior.
  4. In a separate bowl, mix together the vegetables and chunks of tuna.
  5. Fill large frying with vegetable oil until 2cm deep. Heat to 180C over a medium to high heat.
  6. Take a handful of the tuna and vegetable mixture and dip in the batter. Fry for 3-4 minutes until golden and then turn, cooking for a further 2 minutes until golden and cooked through.
  7. Drain on paper towel, season and serve with yoghurt, coriander and sweet chilli sauce.
