Panzanella and Quark Salad with Seared Lamb

  1. Drizzle lamb in olive oil and season with salt and pepper. In a hot oiled pan cook lamb for 1-2 minutes each side or until cooked to your liking. Allow to rest.
  2. In a hot oiled pan, toast bread until golden.
  3. Toss bread, onion, tomato, olives and basil together in a small bowl. Season.
  4. Slice lamb in half diagonally. Place salad on a plate, top with lamb, a dollop of quark and drizzle with olive oil.
