Method

  1. In a large bowl mix together the tuna and oil, Japanese mayo, paprika, potatoes, carrots, corn, half of the chives and the liquid from one bottle of the piquillo peppers. Season to taste.
  2. In a large bowl mix together the tuna and oil, Japanese mayo, paprika, potatoes, carrots, corn, half of the chives and the liquid from one bottle of the piquillo peppers. Season to taste.
  3. Remove the piquillo peppers from the jar and drain on paper towel. Reserve a tablespoon of the remaining liquid.
  4. Using a teaspoon, carefully stuff the pepper with tuna salad. Repeat with remaining peppers and salad.
  5. To serve place the stuffed peppers onto a large platter, sprinkle with toasted almonds, the olive oil, the reserved piquillo liquid and the remaining chives. Season and serve.
